Chocolate Espresso Almond Energy Bites Recipe

Ingredients
  

  • 1 cup rolled oats
  • 2/3 cup almond butter
  • 1/4 cup maple syrup
  • 2 tbsp unsweetened shredded coconut
  • 1 tsp espresso powder
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 cup finely chopped dark chocolate
  • a pinch of salt

Instructions
 

  • Put the rolled oats in a food processor. Pulse four to five times until the oats are coarse.
  • Put the oats in a large bowl, along with the almond butter, maple syrup, unsweetened shredded coconut, espresso powder, vanilla extract, cinnamon, and salt. Stir until well until combined.
  • Add the finely chopped dark chocolate and stir a few more times to combine.
  • Roll the mixture into bite-sized balls.
