Peanut Butter Coffee Energy Balls Recipe

  • Food processor
  • Airtight container

Ingredients
  

  • 1 ½ cups pitted Medjool dates
  • 1/4 cup peanut butter
  • 2 tbsp water
  • 1 tsp instant coffee
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup mini chocolate chips
  • a pinch of salt

Instructions
 

  • Put the dates, peanut butter, and water in a food processor. Process until the dates are broken down and form a paste.
  • Add the instant coffee, rolled oats, almond flour, and salt. Process until combined.
  • Roll the mixture into bite-sized balls.
  • Press mini chocolate chips into the energy balls. Enjoy!
